Velskov on The Morning Show: Bringing NZ’s Forest Dining to Australian TV

It’s not every day you get to host international morning television in the heart of the New Zealand bush.

We loved hosting beautiful Kylie Gillies and the crew from Australia’s The Morning Show at Velskov. In partnership with Tourism New Zealand, the team spent a day stepping away from the hustle of modern life to experience the magic of native forest farming.

What is GastroGeography?

At Velskov, our core philosophy revolves around GastroGeography, "taste of a place." We believe that food should connect us to the land we stand on. Instead of relying on supermarkets, we showed Kylie and her team how to look at the forest as a living pantry. Our property is home to more than 40 edible native plants, each offering unique flavours and health benefits.

Foraging, Feasting, and Giving Back

The day was a beautiful blur of nature, education, and incredible food. The experience included:

  • The "Tumm 30+" Breakfast: A unique, vegan microbiome breakfast made from native botanicals grown in the forest.

  • Open-Fire Cooking: Preparing fresh fish, wrapped in wild leaves, and cooking it over an open flame using traditional techniques.

  • Regenerative Planting: At Velskov, we always give back to the land. Kylie planted a baby tree fern dedicated to her producer’s newborn daughter—a beautiful moment of connection.

Kylie described the farm as a "little slice of heaven," noting how disconnected many of us have become from where our food originates and how vital it is to return to our roots.
